That was the verdict of the Water & Wastewater Treatment’s Industry Forum on FOG.

Dublin City Council project engineer, Michael O’Dwyer, explained how Ireland’s legislation has allowed his authority to crackdown on commercial FOG.

Dublin has been able to use Irish government legislation to create a license system, placing the emphasis for dealing with FOG on the food industry.

Mr O’Dwyer said: “Within those licenses there’s strict conditions, number one install a grease trap which conforms to national standards,

“Number two maintain best practice in the kitchen and, number three ensure your waste FOG is collected by a registered haulier and keep certification ready for inspection.”

Anglian Water’s media manager, Collette Nichols, agreed saying: “It’s been good for us to find out what’s been happening in Dublin.

“And, it seems to me to carry on that system of actually licensing these premises … placing the emphasis on them.”
